harvested separately between the 30th of April and the 14th of May.  A large percentage of the fruit was dehydrated but devoid of botrytis influence resulting in the concentration of very clean and bright fruit flavours.  A smaller percentage of the fruit had been raisened by botrytis.  Ripeness at harvest was between 27 and 28.3 brix.\u003c\/span\u003e\u003cbr\u003e\u003cbr\u003e\u003cspan 0);\"\u003eCareful fruit selection was required from our 43 year old Riesling vines which are all under Organic management.  The soils here are made up of fist sized greywacke stones (a hard, dark type of sandstone streaked with quartz and feldspar), mixed alluvial gravel and silts.  Vineyard practice for this wine is geared to produce ripe grapes that have had maximum \"hang time\" on the vine pressed to tank, settled for 6 hours and then run to Acacia barrel and concrete egg fermenters for spontaneous fermentation.  The remaining 10% was destemmed and went through partial fermentation on skins prior to being pressed off to ceramic jars to complete ferment.  The various components were then left un-sulphured on full ferment lees for 10 months before being blended and February and March saw more settled conditions and as predicted the bulk of our fruit was picked in early April which is later than in recent years. Picked between the 15\u003csup\u003eth\u003c\/sup\u003e and 30\u003csup\u003eth\u003c\/sup\u003e of April the “right” sort of botrytis was difficult to come by due to the persistent humidity and lack of frosts. These conditions did not allow the fruit to fully dry out, therefore we had to be very selective finding suitable material. Individual parcels were fermented until reaching the desired balance.
